In the aftermath of a devastating electrical fire at Mornington wine bar Colt Dining, Matti Fallon divided his attention three fold: rebuilding Colt, starting upcoming ’70s-themed wine bar Vincenzo’s and developing Culprit, a European-style sustainable fine diner inspired by Copenhagen’s now-closed Relae.

Culprit is set to open in Mornington in 2024.
