Where Chefs Eat: So What Stereo’s Meek Brikshavana Reckons This Is the Best Beef Birria in Brisbane

At the end of 2025 when Broadsheet’s Brisbane team was reflecting on its favourite dishes of the year, a fight broke out. We all wanted to write about something we’d eaten at So What Stereo.
The Thai vinyl cafe from Kawid “Meek” Brikshavana and his partner Ratinan “Ploy” Rattanathai burst onto the scene in July, serving regional northern Thai dishes inspired by Brikshavana’s childhood. In December, Kaseem Sook Social followed.
While we’ve all been hooked on Brikshavana’s dishes, he’s been loving these Brisbane venues.
Your favourite drink and dish on the menu at So What Stereo
“The pandan iced latte because it reminds me of home and cuts through our spicy breakfasts very well. My favourite dish is the khao soi because it’s in my blood. But I have to give an honourable mention to our tom yum dry noodles, because they’re the best hangover cure.”
A quick takeaway
“For coffee or matcha, I like Wuta Brewer in the CBD, especially for a pure matcha kick to keep me productive in the afternoon because they stay open until 4pm. For food, I like the truffle cream cheese with added bacon in the black jalapeno bagel at O Bagel. It’s back-to-back goodness.”

“I’d like to visit every jazz kissa in Japan. Number one on my bucket list is Toh Listening Bar, somewhere in Shibuya.”

“Cartel Del Taco because they serve the best beef birria. Beyond the birria, every dish on the menu is extremely tasty.”

“Induction ceramic pots with lids. You can cook everything in them from steak to stew or even instant ramen.”
