Trad Nathan and Tyla Dombroski are committed to keeping the party going.
In late 2024, they bought the space that was once The Zoo, restored it to its former glory and opened it as Crowbar Brisbane, a dedicated live music venue. Now the couple have launched a new hospitality group called the Long Lunch Group, and their first venture is a late-night restaurant and record bar they’re opening in partnership with Trent Lymn, who was previously head chef at The 203.
“Never Enough is really about the things we love: food, drinks, music, art and being around people,” said Dombroski in a statement. “There are never enough of those moments, whether it’s another round, another dish on the table or just another hour spent with friends.”
When it opens later this month, Never Enough will be the sort of place where you can linger. The kitchen will stay open till 11pm, with plans to keep it open later once their licence is updated.
Where Crowbar is all about live music, Never Enough is soundtracked by vinyl records. The team is opening with 300 records, which will play every night on Audio Technica turntables. On Friday and Saturday nights, there’ll be regular DJs.
The two-level bar and dining room in the heritage Apothecaries Hall was designed by Dombroski alongside Kit Bettison from Alida & Miller. The two spaces will have distinct menus, but you’re welcome to order from either menu no matter where you’re sitting. “The menu will focus on seasonality, aging and late-night small plates designed to sit comfortably alongside the drinks and the energy of the room,” said Lymn in a statement.
So far Lymn has teased fried artichokes with white bean puree and sharp salty ricotta salata; and indulgent fried chicken with crème fraîche, caviar and chives. Dry-aged lamb, beef and duck are the backbone of the main menu, while the late-night dry-aged burgers are also expected to be favourites.
General manager Mikey Pattison is spearheading the drinks program, which is designed “so guests can move easily from long lunches into late-night drinks”. Expect a strong wine list, fortifieds, apertivos and amaros.
Never Enough will open in late March at 690 Ann Street, Fortitude Valley.
