Med, at the base of Barton’s Burbury Hotel, is a refined restaurant inspired by the cuisines and cultures of the east Mediterranean. The menu goes big on share plates drawing on flavors from Turkey, Greece and large swathes of the Middle East.

House-made pide, hummus and muhammara are highlights, as are larger dishes such as lamb kofte and beef shishlik. Vegetarian options are no afterthought and might include roasted cauliflower with preserved lemon and yogurt, and a Turkish-style shepherd salad.

A tight wine list takes in local and international options, including lesser-known ones from Lebanon’s thriving scene, such as marijuana-farmers-turned-winemakers Couvent Rouge. Cocktails play on the Mediterranean theme – try the Turkish Delight: Underground Spirits vodka and rose syrup. Beers are from Byron to Egypt.

Med joins Louis, Leyla Bar and Ostani in the Doma Group stable, led by culinary director Ben Willis of acclaimed Canberra fine diner Aubergine.
