First Look: Butterboy Opens a Purple-Hued Manly Flagship – And It’s Anything but Cookie-Cutter

Cookie bakehouse Butterboy has opened a new purple-hued flagship – smack-bang on Manly’s Corso. Owner James Sideris started Butterboy while he was at university, with his fun and cheeky branding and creative flavours resonating with a loyal customer base that has so far bought more than half a million of his cookies. He’s since also founded Rollers Bakehouse around the corner.
The new fit-out is designed by award-winning interior architect George Livissianis (The Apollo, Cho Cho San, Cafe Paci). It’s vibrant and modern, with splashes of purple, plenty of terrazzo and the trademark Butterboy logo on display. Huge windows look down from the Corso to the bakers at work mixing, rolling and baking the chunky cookies.
“We wanted it to be fun and theatrical, like a cookie lab of sorts,” Sideris tells Broadsheet. “We haven’t really done this concept before, where everything is freshly baked on-site and you can look into our kitchen and see what’s going on behind the scenes.”
The counter displays scores of cookies, in flavours such as Nutella choc-chip, salted caramel, white chocolate and macadamia, and snickerdoodle, as well as Golden Gaytime and Mint Slice brownie sandwiches.
New to Butterboy is a soft-serve range, with flavours including coffee, cereal milk and salted caramel whirling from a neon-lit machine. And there’s a series of new flavoured milks such as vanilla malt, blackberry and banana-caramel, with dairy-free and vegan versions available.
“Cookies and ice-creams are such an American offering, we wanted to play on that concept and make sure we’re catering to everyone’s dietary requirements without compromising on flavour. We’ve reworked our cookie recipes to be vegan, and now our broader offerings include that too,” says Sideris.
He says a new vegan muesli cookie with oats, raisins and dark chocolate is a must-try, as is a new strawberries-and-cream creation that’s gluten-free.
Butterboy fans can also take home cookie dough – including the Nutella choc-chip and salted caramel flavours – to bake at home, and buy Butterboy-branded aprons, oven mitts and hats to wear while they bake.
