Three To Try: Boozy Slushies To Slurp Up the Last of Sydney’s Summer Fun
Unlike some people, I love summer. The sun, the swims, the outdoor dining. And if you’re sweaty, simply use it as a reason to order a cold drink – maybe a boozy slushie? The following three are all ripper options.
Lottie’s Rosa Rosada
This frose (frozen rose) mixes two local boozes (Archie Rose’s Sydney-made white cane rum and Hunter Valley’s Usher Tinkler rose) and Xila, a bitter, red, slightly spicy small-batch aperitif made in a micro-distillery in Mexico City. Papaya and strawberries keep everything sweet. The icy, synset-hued cocktail arrives in a holiday-coded hurricane glass, topped with a marigold. It’s ideal with a few poolside snacks at The Eve.

Silver’s Motel’s Midori Splice
This twisted green-and-yellow slushie is looked after by some of our best bar talents – and it’s as silky as they come. Pineapples ripen in-house before being cold-pressed for their sunny juice. Then coconut cream, Malibu and coconut vodka get involved. The pastel-green half keeps the pine profile going, with melon and Midori too. Arrive at your leisure – this splice is kept perpetually fluffy by churning in a granita machine.

El Primo Sanchez’s Horchata Colada
Horchata is a milky rice-based drink seen all over Mexico. Here, at the newest home for the El Primo party, it’s taken to the boozy side. This Colada is cinnamon-spicy, creamy, and sweet with condensed milk. Macadamias give it a buttery depth (and local edge), while coconut takes it to the tropics. The dose of Patron tequila means it’s prime for powering that teeny karaoke room.
