Picture this: an outdoor table at Pilu’s relaxed younger sibling Baretto as the sun goes down, with an Amaretto Sour in your glass and a selection of contemporary Italian small dishes all over the table. This dreamy scene can easily be your reality.

There’s a new roaming pop-up bar making stops at venues all over the northern beaches for a touch of la dolce vita. You’ll find it at top venues like Pilu Baretto, Cibaria, In Situ and The Cumberland.

The Disaronno Bar on Wheels is made for tableside visits in the crisp beach air, so expect the special bar cart to park right beside you for a theatrical experience that brings Italian flair to your sunset cocktails. The hero cocktail is, of course, the Amaretto Sour – watch as the bartender shakes this bright, classic mix using Disaronno amaretto for that authentic flavour, plus lemon juice, simple syrup and egg whites (with vegan options available), before pouring it over ice, with that unmistakable frothy and silky top. The result? A sweet nuttiness akin to almonds and marzipan, with plenty of zest and freshness.

Alongside the Amaretto Sour, each venue will also pour limited-edition cocktails and spritzes made with the Italian amaretto. Pair them with aperitivo snacks from some of the venues – expect cheeses, oysters, cured meats and other savoury bites that’ll complement both the ocean views and amaretto drinks.

The first stop is Pilu at Freshwater, where the Disaronno Bar on Wheels will pop up during the venue’s Baretto Nights event series on Fridays and Saturdays from March 13 to 21. Chef Giovanni Pilu’s contemporary, ever-changing menu of antipasti, calamari fritti and pasta dishes are the perfect accompaniment to amaretto sours, spritzes and cocktails, plus front-row seats to Freshwater Beach.

From March 23 to April 6, catch the pop-up bar cart at Manly’s Cibaria instead. The beachfront restaurant – by husband-and-wife duo Alessandro and Anna Pavoni of Ormeggio at The Spit – is designed to mimic the piazza-style dining of Italy, with the Disaronno drinks adding to the experience.

Next up is In Situ, where the bar cart will wheel around from April 6 to 13. Open for nearly 26 years, this Manly institution is known for its pizzas, though recent menu additions include ragu lasagne, salmon tartare and gnocco fritto.

And while the Disaronno bar on wheels isn’t making a stop at The Cumberland, the subterranean bar hidden in a deli is transforming into an Italian speakeasy, with an amaretto sour, spritz and limited-edition cocktail exclusive to this takeover. All the drinks are available from March to May 10, and pair perfectly with the house charcuterie board.

Don’t worry if you’ve missed the roving cart’s dates – all the special drinks (including the Disaronno Amaretto Sour, bespoke cocktails and spritzes) are available at Pilu Baretto, Cibaria, In Situ and The Cumberland from March 10 until May 10. Cheers to that.
